Letter: Power of induction cooking

I would like to offer a correction to the article that stated that induction is a less powerful cooking option. Comparing a 110v induction hot plate to a residential or commercial gas cooktop gives the wrong impression. A 220v residential induction cooktop is a very powerful tool, easily rivaling a residential gas cooktop. It is instant on and instant off. Pans must be allowed to heat up and cool down just as they do on any cooktop, but with proper preheating an excellent sear is available.

Induction cooktops offer a great improvement in safety over gas and even electric as there is little risk of fire when using them. Even when the cooking is hot it is unlikely to burn. There are also no emissions, an issue carefully addressed in commercial kitchens but rarely considered by home cooks. Do not underestimate this fine method of cooking. If you are planning to replace your cooktop it is truly worth your consideration.
